This hands-on class teaches you how to cook "everything jerk". Learn the spices and history of jerk, prepare the meal, then eat on a veranda with a view of the Caribbean Sea. An excellent 5/5 excursion! Jerk cooking is an authentic Jamaican method of cooking meat. Whether it's pork, chicken, beef, or fish, the meat is seasoned and slow-cooked over an open fire or on a barbecue grill. The seasoning is made of local/regional spices such as shallots, onion, thyme, pimento (allspice), cinnamon, nutmeg, peppers, and salt. The first taste of jerked food is spicy from the pepper and, as you eat, the flavors of all the other spices blend in your mouth for an explosion of amazing flavors. It's for this reason that all the other islands have adopted Jerk. Jerk is now considered a regional food, and everyone has their own recipe for preparing jerk seasoning. In her class, Nicole will introduce you to all the jerk spices, give you an overview of the history of jerk, and discuss the different ways to use jerk seasoning to give your dishes their own West Indian style when you return home. Once lunch is ready, you can enjoy it on our large veranda with a view of the Caribbean Sea (and the hummingbirds that frequent our orchids). A typical menu includes Cocktails: A local juice, water from our cisterns, and Nicole's old-fashioned rum punch. Starter: A local juice, water from our cisterns, and Nicole's old-fashioned rum punch. Jerk Chicken (or Tofu!) with grilled pineapple Sides: Bacon-wrapped plantains, red beans and rice, and garden salad Dessert: Coconut cream pie The goal of this class is to allow you to easily cook the same menu once you return home. All of this is offered from the house located on a hill overlooking the Caribbean Sea. This experience will give you a beautiful view and the opportunity to live life the Caribbean way.
