The Cayman Islands' first craft distillery, producing award-winning Seven Fathoms rum, the world's only rum aged underwater in oak barrels sunk 23 metres below the surface of the Caribbean Sea. The tidal currents gently rock the barrels, accelerating the aging process and imparting a unique ocean character. Tours of the George Town distillery explain the underwater aging technique and end with tastings of Seven Fathoms alongside their Cayman Vodka.
